Fish Baked in Curry
This curry-marinated baked fish, which is paired with our quick and simple basmati rice, is sure to please the entire family.
Ingredients
- 2 bags Success® Basmati Rice
- nonstick cooking spray
- 4 tilapia fillets
- 1/3 cup apple cider vinegar
- 1 tbsp curry powder
- 1 tbsp ground ginger
- 2 tsp garlic powder
- 1 tsp ground cumin
- 1 tsp salt
- 1/2 tsp black pepper
- fresh cilantro leaves, for garnish

Step 1
Turn on the 375°F oven. As directed on the package, prepare the rice.
Step 2
Spray nonstick cooking spray in a large baking dish. Fish fillets should be dried with paper towels and placed on a plate. Combine vinegar, ginger, garlic powder, cumin, curry powder, salt, and pepper in a small bowl.
Step 3
Apply curry mixture to fish, then chill for 20 minutes. Take the fish out of the fridge and bake for 10 minutes, or until it flakes easily.
Step 4
With cilantro as a garnish, serve the fish over the rice.
